Bacon Viniagrette

To make a bacon viniagrette first render the bacon and pour most of the grease into a side container retaining 1 tablespoon in the frying pan. Add the sliced onions to the frying pan and sauté on medium high heat until the onions are almost translucent. Add the sliced mushrooms. Season with salt and pepper and cook until onions are translucent. Pour the onions and mushrooms into a separate container and turn the burner off. Pour 3 tablespoons of bacon fat back into the pan. In a separate bowl mix the coarse ground mustard with the red wine vinegar and stir well. Slowly whisk in the warm bacon fat and stir until the fat is fully incorporated into the vinaigrette. Pour the dressing in a container off to the side.

  • 1/2 lb bacon
  • 1/2 lb. of bacon
  • 1 sliced onion
  • Handful of sliced mushrooms
  • 3 tablespoons red wine vinegar
  • 2 tablespoons coarse ground mustard
  • Salt and pepper to taste
