Bernaise Sauce

To make Bernaise sauce: In a small pan melt the butter. Add the onions and simmer until translucent. Add the tarragon and stir until the tarragon is saturated with the butter oils. Add the red wine and red wine vinegar and simmer until the mixture is reduced to the point of very little liquid is remains. Add the mixture to the basic hollandaise and stir.

  • 1/4 cup fine diced onions
  • 2 tbl spoons dried tarragon
  • 1/8 lb (half a stick) butter
  • 1/8 cup red wine vinegar
  • 1/8 cup red wine
