Spinach Salad with Bacon Vinaigrette

To make Spinach salad with bacon vinaigrette first render the bacon and pour most of the grease into a side container retaining 1 tablespoon in the frying pan. Add the sliced onions to the frying pan and sauté on medium high heat until the onions are almost translucent. Add the sliced mushrooms. Season with salt and pepper and cook until onions are translucent. Pour the onions and mushrooms into a separate container and turn the burner off. Pour 3 tablespoons of bacon fat back into the pan. In a separate bowl mix the coarse ground mustard with the red wine vinegar and stir well. Slowly whisk in the warm bacon fat and stir until the fat is fully incorporated into the vinaigrette. Pour the dressing in a container off to the side. Place the washed spinach into the bowl and then add the onions and mushrooms. Season with salt and pepper. Add the rendered bacon. Add the croutons. Dress the salad with the vinaigrette and toss.

  • 1/2 lb bacon
  • 1 sliced onion
  • Handful of sliced mushrooms
  • 3 tablespoons red wine vinegar
  • 2 tablespoons coarse ground mustard
  • 1 good size bag of washed spinach
  • Salt and pepper to taste
