European Omelette

Heat pan on medium heat until butter melts. Add onions and mushrooms and sautee until onions are transparent and mushrooms browned. Add whipped eggs. Using spatula scrape surface of pan so that the cooked portion of eggs is pulled away and the raw egg sees the hot surface. When most of the eggs surface underneath is cooked, again using spatula rub butter around the edge of omlette to get the butter underneath. Flip and remove from heat. Add cheese then fold omlette over. Garnish with cheese and put under broiler a few seconds or microwave. Garnish with chives.

  • 4 sliced mushrooms
  • 3 tbl spoons diced white onion
  • cheese
  • chives for garnish
  • slice of butter
  • 3 eggs
