Lentil Soup

In a soup pot over medium low heat, cook diced bacon until most of the fat is rendered. Add carrots stirring occasionally for 1 - 2 minutes. Add onions and celery and continue cooking until onions are starting to soften. Add lentils and stir well in the bacon oils until all lentils are coated. Add water and turn heat to med high until the soup comes to a rolling boil. Reduce to simmer adding water as necessary until the starch begins to come out of the lentils into the liquid and the lentils are soft. Cook for an additional 20 minutes and serve.

  • medium dice
  • 1 cup diced fine diced onions
  • 1/2 cup diced carrots
  • 1 cup diced celery
  • 2 cups brown lentils
  • 2 quarts water
  • salt & pepper to taste
