Tomato Baskets

Twist the stem from the tomato and place the stem side down on the cutting board. Slice downward until you have reached the equator. Slice again to the equator 3/8 of an inch from the previous cut. Turn and cut a 45 degree angle to meet the first slice. Remove wedges and hollow out. Place Parboild Asparagus in the tomato baskets and place in a preheated 350 degree oven for 20 minutes. Dress the warm tomato baskets with a compound butter or vinigrette

  • 4-5 parboiled Aparagus Spears per Person
