Red Snapper in Caper butter

Cut Fillets in half to better be able to fit in the frying pan. Dredge the fillets in seasoned flour. Melt the butter in the pan and add the fillets. Saute fro 2 1/2 to 3 minutes until the bottom is golden brown. Flip the fillets. Saute another 3 minutes until golden brown. Squeeze the juice from 1/2 a lemon over the fillets and remove from heat. Remove the fillets from the pan onto a serving platter. Add the capers to the pan and squeeze the other half of the lemon. Scrape and mix the lemon juice and capers using a fork. Add more butter and mix into the sauce. Squeeze the other half of the lemon in and add more butter if needed. Drizzle the sauce over the fillets and serve.

  • 1 Red snapper Fillet per person
  • Seasoned Flour
  • 1 Tbl Spoon Capers per Fillet
  • 1 Tbl Spoon Butter per Fillet
  • 1 Lemon
