Frying Eggs

Melt butter in a frying pan on medium heat. Crack eggs on a flat surface and dump into a bowl so that all eggs hit the heated surface of the pan at the same time. After you have poured the eggs into the pan, wait a few moments until the bottom of the eggs have cooked a bit and they move uniformly and slip a little. Then work the eggs around so that the yolks, which are the heaviest part of the egg, are perpendicular to the handle. Flip the eggs. After you have flipped the eggs, wait for 30 seconds for over easy eggs. Wait for one minute for over medium.
