Separating egg yolks

To separate the egg yolk from the egg white first crack the egg on the corner of the counter top. Pour the egg yolk into your cupped palm and slowly allow the egg whites to sift between your fingers as you pour the yolk from hand to hand. Pinch the white tail from the yolk and place the yolk in a separate bowl.
