Chicken Saltimbocca

To make chicken saltimbocca first slice the chicken breast length wise in thin even slices. Dredge well in seasoned flour, about 1 part salt and spices to 8 parts flour. Portion the ham and the swiss cheese to the appropriate size to match the chicken slices. Melt the butter on a frying pan on medium heat. Place the chicken breasts in the melted butter and fry until the bottom is golden brown and then flip the chicken breast. Turn the heat down. Grill the ham enough to give each side a good carmalization and then lay it on the chicken breast. Ladle enough heated marinara sauce to cover 3/4 of the chicken breast. Lay the swiss cheese on the sauce and cover the frying pan. Wait until the cheese has melted and then plate it for service.

  • Swiss cheese (1/2 per slice of chicken)
