To make the the Chivry emerald dressing first combine ingredients in a blender and blend until well mixed.
This dressing stays good for 7-10 days.
- 1/4 cup apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1/4 cup filtered water
- 1/4 of white onion, diced
- 1 celery rib, diced
- handful of parsley
- 2 sprigs of fresh thyme
- 1/2 avocado
- Juice of 1/2 lemon
- Salt and Pepper to taste
