Morel Mushroom Brown Sauce

To make Morel Mushroom brown sauce first melt the butter on medium heat in a saute pan. Add the onions and crimini mushrooms and saute until starting to become translucent. Add the sliced morel mushrooms. Saute for a few minutes. Add the red wine and reduce. Add the saved mushroom tea from the re-hydration. Reduce the liquid by half. Add the morel mushrooms and tea to the basic brown sauce and stir. Add a corn starch slurry (add the corn starch to a few tablespoons of water in a jar and shake well. Cook ten to fifteen more minutes to cook the corn starch out.

  • !/2 diced white onion
  • 1 cup sliced crimini mushrooms
  • 1 cup re-hydrated morel mushrooms
  • 1/8 cup butter (1/4 stick)
  • 1 1/2 heaping tablespoon corn starch
  • 1/2 cup red wine
  • Basic Brown Sauce
