Basic Brown Sauce

To make a basic brown sauce first melt the butter in a sauté pan on medium heat. Add an equal amount of olive oil. When it has come to temperature, slowly add the flour and use a whisk to fully incorporate the flour into the oils. Continue to whisk the rue until it begins to tan up. Turn the heat down to medium low and continue to whisk. When the rue takes on a slight nutty flavor, slowly add cold water. It is imperative that the water be cold. Vigorously whisk the cold water into the rue until you have a creamy texture. Continue to slowly whisk the sauce as you cook it. Add the beef stock and stir it in. Pour in the red wine and allow to reduce. The brown sauce will have a deep burgundy color and a hearty beef flavor.

  • 1/8 cup butter (1/2 a stick)
  • 1/8 olive oil
  • 1 1/2 cup flour
  • 1 Heaping tablespoon beef base
  • 1 red wine
